Rack of Spring Dartmoor Lamb with Wild Garlic Mash

Spring Recipes

 

Rack of Holwell Spring Lamb with Wild Garlic Mash & Baby Vegetables & served with Tomato & Olive Dressing.

 

Serves 4

 

Ingredients:

 

2 Racks of Lamb

1Kg Potatoes

200ml Cream

50g Butter

2 Leaves of Wild Garlic

12 Baby Carrots

12 Baby Leeks

12 Baby Turnip

12 Baby Beetroot

4 Plum Tomatoes

4 Diced Shallots

1 Clove Garlic

200ml Olive Oil

12 Black Olives

1 Sprig Chopped Parsley

 

Method:

 

Pre-Heat Oven to 200oC

 

1: Peel & chop Potatoes and put on to boil in salted water

 

2: Clean, prepare & blanch Baby Vegetables, then refresh

 

3: Quarter & de-seed the Plum Tomatoes & then roughly dice & set aside

 

4: Seal Racks of Lamb & place in the oven for 12-15 minutes

5: Mash Potatoes with Butter, Cream & thinly sliced Wild Garlic

 

6: Remove Lamb & allow to rest

 

7: Place the Shallots, Garlic & Olive Oil in a pan & warm gently. Then add the Olives, Plum Tomatoes & Parsley

 

8: Place the Garlic Mash in the centre of the plate, slice the Lamb & arrange on the Mash & finish with warm dressing
